THE MANS MEAL


HEY MEN, THIS ONE'S FOR YOU! KICK OFF YOU BOOTS AND LETS CHOW. CRACK OPEN A BEER AND TUNE INTO FOOTBALL. START WITH SOME STUFFED MUSHROOMS. FIRE UP THE B-B-QUE GRILL FOR SKEWERS OF MOUTH WATERING BEEF KABOBS . LOAD UP YOUR PLATE WITH A HOT TWICE BAKED POTATOE AND SCOOP UP SHRIMP SALAD AND TASTY GREEN BEANS. FINISH WITH A CHUNK OF BEER CAKE. WHEN FULL FEEL FREE TO SCRATCH, BURP, AND TAKE A NAP!

 

 


STUFFED MUSHROOMS

24 large mushrooms
1/4 c. chopped green onions
1 TBL. butter
1 c. chopped mushroom stems
2 t. flour
1/4 t. dried savory
2 TBL. dry white wine
1/8 t. pepper
2 TBL. water
3/4 c. cooked bacon
2 TBL. parmesan cheese
1/4 t pepper
1 c. grated Monterey jack cheese

Remove stems from mushrooms. Simmer onion and stems in butter until tender. Stir in flour, savory, pepper, wine and water. Cook until thick and bubbly; stir in bacon and parmesan. Fill mushroom caps. Top with Monterey jack cheese. Bake at 350 degrees oven for 20 minutes.

BEEF KABOBS

1 TBL. olive oil
2 TBL. ground cumin
1 t. cinnamon
1/4 c. finely chopped rosemary
1 TBL. finely chopped garlic
1 1/2 t. salt
1 t. pepper
2 lb. lean beef (cut into 1/2" chunks)
cherry tomatoes (approx. 20)
3 green peppers (cut into wedges)
3 large onions (cut into wedges)

Combine oil, cumin,cinnamon,rosemary,garlic,salt and pepper in a large bowl. Add chunks of beef and toss well to coat. Thread chunks onto skewers, alternating with onion, cherry tomatoes and green pepper. Grill over hot fire for 3 min. on each side [for medium-rare], or slightly less done than you prefer as meat will continue to cook for a few minutes after removed from the flame. Also note that the meat rub will burn easily so watch closely.

TWICE BAKED POTATOES

8 large potatoes
8 oz. cream cheese
1/2 c. sour cream
1 c. grated cheddar cheese
2 TLB. parsley
1 t. salt
1 t. pepper

Wash and bake potatoes. Cool and slice in half length wise.
Scoop out potatoe with spoon leaving 1/2 inch with skin.
In large bowl mix potatoes with above ingredients until creamy.
Scoop into the skins. Bake at 350 degrees 20 minutes.

SHRIMP SALAD


1 lb. elbow macaroni
2 cans Shrimp [rinse & drain]
1 large onion [chopped fine]
1 large green pepper [chopped fine]
2 stalks celery [chopped fine]
6 radishes [chopped fine]
3/4 c mayonnaise

Cook and drain noodles.
In mixing bowl combine noodles and above ingredients.
Salt and pepper to taste. Chill and serve.

GREEN BEANS


1 large can french cut green beans (drained)
1 can cream of mushroom soup
3/4 c. sliced almonds
1 c. Durkee Dried Onions
1 c. cooked bacon (crumbled)

Mix beans, mushroom soup, almonds,
3/4 dried onions and bacon. Pour into baking dish.
Top with remaining dried onions and
bake for 20 minutes.

BEER CAKE


1 t. baking soda
2 c. dark brown sugar
1 c. margarine (softened)
2 eggs
1 1/2 c. chopped nuts
2 c. chopped dates
2 c. beer
3 c. sifted flour
1 t. cloves
1 t. cinnamon
1 t. allspice

In large mixing bowl cream soda, sugar and margarine.Add eggs and beat until smooth. Add nuts and dates alternating with beer. Mix well. Sift together flour, cloves, cinnamon and allspice and add to mixture. Mix well and pour into greased and floured 10" tube pan. Bake in preheated 300 degrees oven for 1 1/2 hours or until cake tests done.

Breakfast

Breakfast Pizza

1-8 ounce tube crescent rolls
6 eggs (beaten)
1 lb bacon or sausage
(cooked, drained and crumbled)
1 1/2 c shredded cheddar cheese
1/2 c green pepper
(finely chopped)
1/2 c green onion
(finely chopped)
1/2 c tomatoe
(finely chopped)
1-4 ounce can sliced mushrooms
(optional)

Preheat oven to 375 degrees. Unroll dough and press into lightly greased 12" pizza pan forming crust. Scramble eggs and pour evenly over crust. Evenly layer remaining ingredients atop. Bake 15-20 minutes or until golden brown. Absolutely, one of my favorites.

New Favorite

Cheesy Bean Dip

1 lg. can re-fried beans
1 can Rotel Diced Tomatoes
1 pkg. taco seasoning
1 3/4 c. grated Mexican cheese
1 pkg taco seasoning
1 med onion diced
1/2 green pepper diced
1 bag favorites nacho chips

In mixing bowl, combine re-fried beans, Rotel Tomatoes, taco seasoning, onion, green pepper and 1 c. of the cheese. Mix well. Pour into baking dish and cover with remaining cheese. Bake in 350 degree oven until cheese is melted.
Serve with tortilla chips for dipping.

Banana Cake


This is a amazing cake for any occasion. A frequently requested cake, from Mom's recipe box. She will swirl warmed Rasberry Jam (seedless) atop the buttercream frosting. It creates a beautiful garnish. Click here for this recipe.

Snacks

Stuffed Cherry Tomatoes

20 cherry tomatoes
1 lb bacon (cooked & crumbled)
1/2 c mayonnaise
1/3 c chopped green onions
3 tbl grated parmesan cheese
2 tbl parsley

Cut thin slice off each tomatoe top. Scoop out pulp & discard. Place tomatoes upsidedown on toweling to drain. In mixing bowl, combine remaining ingredients. Mix well. Spoon mixture into tomatoes. Refridgerate for 2 hours.
Enjoy!

Snacks

Spinach & Stuffing Balls

2 pkgs frozen spinach
2 boxes Stove Top Stuffing
1 1/2 sticks butter
1 c parmesan cheese
6 eggs

Drain and pat dry spinach. Place in mixing bowl and mix with stuffing, melted butter, grated parmesan cheese and eggs. Mix well and form balls. Place on ungreased cookie sheet and bake for 20 minutes at 350 degrees.
Easy and Yummy.

Snacks
Rolled Green Onions

12 green onions
1 pkg cream cheese
1 pkg thin sliced beef (lunchmeat)


Wash green onions. Cut away rooted ends and cut green ends (leaving enough green stalky leaves to show out of ends the beef when rolled) so they are all the same length. Lay 1 slice beef on flat surface and dab it dry with paper towel. Lightly & gently spread (room tempurature) cream cheese over entire slice of beef. Lay green onion at one end and roll up entirely. Continue until all green onions are done and serve chilled.

New Recipe

Asparagus Croissants

Place uncooked croissant rolls on baking sheet separate & rolled out. Blanch fresh asparagus for 2 minutes. Pat dry. Make one pkg. Hollandaise Sauce and spread thin coat onto each cresant roll. Place one asparagus spear on each wide end of croissant roll and begin to roll until your reach to pointed end. Continue until all rolls are complete. Arrange for baking and glaze with more Hollandaise Sauce. Sprinkle parmesan cheese atop and bake according to directions for the croissant rolls.
