Menu's

Menu for Ladies Luncheon

Gather a few friends (wear stretchies, this is far
from a dainty, light meal). Start with sipping
on chilled homeade Baileys. Nibble on your
favorite fruit sliced and dipped in Fruit Dip. For
the main course, serve Vegatable Chicken Lasagna
with Garlic Bread. The side dishes include
Lime Jello, Bean Salad and Seven Cup Salad.
Now for the grand finale...Eclair Cake .

 

 

 

BAILEYS

thanks mom

2 c. heavy whip cream
1 14 oz. can sweetened condensed milk
3/4 c. whiskey
2 TBL. instant coffee
2 TBL. chocolate syrup
1 TBL.vanilla extract
Mix very well and pour into 16 oz. dark bottle.
Shake well and refridgerate for 24 hours. Shake well before serving!
ENJOY!

FRUIT DIP

1 package cream cheese - softened
1 package pina colada mix (dry)
1/2 c. milk
1 c. cool whip
2 drops red food coloring

Mix very well till creamy and use for dipping your favorite freshly cut fruit.

VEGATABLE/CHICKEN LASAGNA

3 c. cooked chicken - shredded
3 c. zucchini - peeled & sliced thin
3 c. mozarella cheese - shredded
1 lb. lasagna noodles - cooked but leave firm
48 ounces of your favorite spaghetti sauce
2 TBL. garlic
1/4 c. fennel
4 TBL. parsley
2 TBL. oregano
1/2 c. onion - diced

Simmer spaghetti sauce with garlic, fennel, parsley, oregano, onion for 1 hour. In 13 x 9 baking dish ladle enough sauce to cover the bottom of dish. Lay a row of noodles with each one overlapping the next (you may have to cut some of them to fit). Ladle more sauce to cover noodles. Next lay 1 1/2 c. of chicken, spread evenly. Do the same with 1 1/2 c. of zucchini and 1 c. of mozarella cheese. Cover with more sauce. The next layer is noodles and repeat the last order of ingredients. After the next layer of noodles, cover well with sauce and remaining cheese. Bake for 45 min. in 350 degree oven. Let cool some before cutting portions.

LIME JELLO

Prepare 1 6 oz. package Lime Jello as directed for adding fruit.
Chill 1 1/2 hours or until it begins to thicken.
Add...1/2 c. walnuts - chopped fine
1/2 c. carrots - grated
1/2 c. red apples - cut into tiny bits
1/2 c. celery - cut into tiny bits
Fold into jello mixture and chill for 4 hours or until firm.
Enjoy!

BEAN SALAD
moms favorite

1 can Kidney Beans - drained
1 can Green Beans - drained
1 can Wax Beans - drained
1 can Chi Chi Beans - drained
1 onion - diced fine
1/2 C. salad oil
1/4 c. wine vinegar
1/2 t. salt
1 t. garlic
1/2 t. oregano
1 t. sugar
Toss well. Chill, serve and Enjoy!

SEVEN CUP SALAD

1 cup each...
pinapple - crushed (drained)
coconut
cottage cheese
manderian oranges
sour cream
walnuts
miniature marshmellows
Mix well, chill, serve.

ECLAIR CAKE

1 box Graham Crackers
2 3oz. packages Instant French Vanilla Pudding
3 1/2 c. cold milk
1 8oz. package cool whip

Butter a 13 x 9 pan - line bottom with a single layer of whole graham crackers. Prepare pudding as directed, except use 3 1/2 c. milk. Fold in cool whip to prepared pudding. Put 1/2 the mixture over crackers and spread evenly. Then lay another layer of crackers and then spread the rest of the pudding and a final layer of crackers.

ECLAIR CAKE FROSTING
3 TBL. butter
3 TBL. milk
2 oz. unsweetened chocolate squares
2 TBL white Karo Syrup
1 t. vanilla
1 1/2 c. powdered sugar
Mix in sauce pan over low heat until creamy
and spread over crackers immediately. Refridgerate for 24 hours.

Breakfast

Breakfast Pizza

1-8 ounce tube crescent rolls
6 eggs (beaten)
1 lb bacon or sausage
(cooked, drained and crumbled)
1 1/2 c shredded cheddar cheese
1/2 c green pepper
(finely chopped)
1/2 c green onion
(finely chopped)
1/2 c tomatoe
(finely chopped)
1-4 ounce can sliced mushrooms
(optional)

Preheat oven to 375 degrees. Unroll dough and press into lightly greased 12" pizza pan forming crust. Scramble eggs and pour evenly over crust. Evenly layer remaining ingredients atop. Bake 15-20 minutes or until golden brown. Absolutely, one of my favorites.

New Favorite

Cheesy Bean Dip

1 lg. can re-fried beans
1 can Rotel Diced Tomatoes
1 pkg. taco seasoning
1 3/4 c. grated Mexican cheese
1 pkg taco seasoning
1 med onion diced
1/2 green pepper diced
1 bag favorites nacho chips

In mixing bowl, combine re-fried beans, Rotel Tomatoes, taco seasoning, onion, green pepper and 1 c. of the cheese. Mix well. Pour into baking dish and cover with remaining cheese. Bake in 350 degree oven until cheese is melted.
Serve with tortilla chips for dipping.

Banana Cake


This is a amazing cake for any occasion. A frequently requested cake, from Mom's recipe box. She will swirl warmed Rasberry Jam (seedless) atop the buttercream frosting. It creates a beautiful garnish. Click here for this recipe.

Snacks

Stuffed Cherry Tomatoes

20 cherry tomatoes
1 lb bacon (cooked & crumbled)
1/2 c mayonnaise
1/3 c chopped green onions
3 tbl grated parmesan cheese
2 tbl parsley

Cut thin slice off each tomatoe top. Scoop out pulp & discard. Place tomatoes upsidedown on toweling to drain. In mixing bowl, combine remaining ingredients. Mix well. Spoon mixture into tomatoes. Refridgerate for 2 hours.
Enjoy!

Snacks

Spinach & Stuffing Balls

2 pkgs frozen spinach
2 boxes Stove Top Stuffing
1 1/2 sticks butter
1 c parmesan cheese
6 eggs

Drain and pat dry spinach. Place in mixing bowl and mix with stuffing, melted butter, grated parmesan cheese and eggs. Mix well and form balls. Place on ungreased cookie sheet and bake for 20 minutes at 350 degrees.
Easy and Yummy.

Snacks
Rolled Green Onions

12 green onions
1 pkg cream cheese
1 pkg thin sliced beef (lunchmeat)


Wash green onions. Cut away rooted ends and cut green ends (leaving enough green stalky leaves to show out of ends the beef when rolled) so they are all the same length. Lay 1 slice beef on flat surface and dab it dry with paper towel. Lightly & gently spread (room tempurature) cream cheese over entire slice of beef. Lay green onion at one end and roll up entirely. Continue until all green onions are done and serve chilled.

New Recipe

Asparagus Croissants

Place uncooked croissant rolls on baking sheet separate & rolled out. Blanch fresh asparagus for 2 minutes. Pat dry. Make one pkg. Hollandaise Sauce and spread thin coat onto each cresant roll. Place one asparagus spear on each wide end of croissant roll and begin to roll until your reach to pointed end. Continue until all rolls are complete. Arrange for baking and glaze with more Hollandaise Sauce. Sprinkle parmesan cheese atop and bake according to directions for the croissant rolls.
