Let's do Burgers
Ahhh! The all American Hamburger. Most fast food joints, sit down restaurants, picnic or home dinner tables will have hamburgers on the menu. From pan fried to barbequed, these popular sandwiches are a favorite. Most commonly served with pickles & french fries. However, potatoe salad, deviled eggs, onion rings potatoe chips and garden salads make great side dishes also.

Tasty Treat
Caramel Corn
8 quarts popped popcorn
2 c. brown sugar
2 sticks butter
1/2 c. white corn syrup
1 t. salt
1 t. vanilla
1/2 t. baking soda
3 c. peanuts
Put popped popcorn and peanuts in large mixing bowl. Set aside. In saucepan, combine brown sugar, butter, corn syrup, salt and vanilla. Bring the syrup to a boil for 5 minutes-watch close! Remove pot from burner and add baking soda. It will become foamy. Quickly pour over the popcorn and peanuts. Stir until popcorn is covered well. Pour onto large cookie sheet. Spread out and bake in 250 degrees oven for 1 hour. Stir every 15 minutes, until cool. Store in airtight container.


"What's For Dinner?" I can help with ideas for that daily question asked in homes nearly everywhere. Let's get started. How about Crunchy Herb Chicken, with Cabbage Salad, Roasted Redskins and Green Beans. Serve a yummy Banana Cake for dessert.
Banana Cake

While cooking with these recipes, please keep in mind, most of them are spiced to my liking. Feel free to add more or go lighter on the spices. When I try new recipes, I might omit something I do not care for or add extra amounts if I favor that particular ingredient. However, be careful with baking ingredients, such as those like flour, baking soda, baking powder, eggs and so on. The result in a cake rising properly may be disappointing. With that said, have fun and enjoy!

Rice Crispy treats

Arrange *fondue pot in center of table. Each guest should have fondue forks and a plate. As with any fondue, please supervise when serving to avoid burns or fire. Melt chocolate chips first , in double boiler or in sauce pan on low heat. Watch closely as not to burn chocolate. Transfer into fondue pot. Keep sterno on low to med heat so chocolate does not burn. Prepare dippers. Slice bananas into bite size pieces. Wash fruit. Cut up angel food cake & Rice Crispy treats into bite size pieces. Set dippers in dishes near fondue pot. Dip and let cool a bit before eating. Be creative, you can dip anything that can be skewed into the chocolate.
*A small crock pot works well as a fondue pot.




Feature Salad
1 3 oz. pkg. Lime Jello
1/2 c. chopped walnuts
1/2 c. grated carrots
1/2 c. diced red apples (with skin)
1/2 c. diced celery
Prepare Jello as directed on box. Chill until thickened (about 1 1/2 hours). Add remaining ingredients and stir well. Place into fridge until Jello has set.

1/3 c flour
1/4 t basil
1/2 t thyme
1/2 t rosemary (ground)
1/8 t pepper
1/4 c butter (melted)
1/3 c milk
3 lb chicken (skinned & de-boned)
5 c corn flakes (crushed)

Pre-heat oven to 375 degrees. In mixing bowl, combine flour, basil, thyme, rosemary & pepper. Mix well. Add butter & milk. Mix well. Cut chicken into strips. Dip chicken into flour mixture. Coat well & roll in crushed cereal. Coat evenly. Place in baking dish lightly coated with oil. Bake for 55 minutes or until chicken is no longer pink & coating is golden brown.

Deviled Eggs

6 eggs
1/2 teaspoon paprika
2 tablespoons mayonnaise
1/2 teaspoon mustard powder
dash salt & pepper

Place eggs in a pot of water. Bring to a boil. Cook in 10 minutes. Remove eggs from pan and cool. Peel shell and cut eggs in half, lengthwise. Remove the egg yolks and mash in a small mixing bowl. Add paprika, mayonnaise, dry mustard, salt & pepper. Mix well. Spoon mixture into the egg shells.
Garnish with a sprinkle of paprika. Serve cold.


Side Dish

Baked Beans

1 lg can baked beans
1/2 c ketchup
1 t Kitchen Bouquet
1/8 c molasses
1 small onion
1/2 pkg onion soup mix
Preheat oven to 350 degrees. Mix all ingredients well and pour into baking pan. Bake in oven for 1 hour. Salt and pepper to taste. Serve Hot.

The Hamburger
1 lb lean ground beef
salt & pepper
1 pkg favorite hamburger buns
tomatoe (sliced thin)
lettuce leaves(washed)
onion (sliced thin)
Form 2" balls from raw hamburger meat. Squeeze together until meat is firmly packed. Press balls with hands until evenly round & flattened. Salt & pepper to taste. In hot skillet, fry hamburger patties on meduim heat 5 minutes each side or until meat is no longer pink. I like to spread butter on inside of bun & grill in skillet until lightly browned. Place hamburger on bun and top with favorites toppings. Serve hot.

Hawaii Burger

1 lb lean ground beef
1 can pineapple slices
2 tbl pineapple preserves 1 c barbeque sauce
1 pkg hamburger buns
Fire up the grill. These are best cooked on the grill. In sauce pan combine barbeque sauce & pineapple preserves. Simmer for 10 minutes. Form hamburger patties & cook over flame 5 minutes each side or until meat is no longer pink. After flipping patties, spread barbeque sauce atop. Gently lay pineapple rings on grill until lightly browned. Place hamburger pattie on bun & lay pineapple ring atop. Serve hot.

Bacon Burger
1 large onion (grated)
1 c mashed potato flakes
2 eggs (beaten)
1 t garlic
1 t salt
1/2 t pepper
2 lb ground beef
8 bacon strips
8 hamburger buns
8 lettuce leaves
In a large bowl, combine the first 6 ingredients. Crumble beef over mixture. Mix well. Shape into eight patties. Wrap a bacon strip around each patty. In a large skillet, cook burgers 5 minutes each side or until meat is no longer pink and bacon is crisp. Place on hamburger bun. Top with lettuce. Serve hot.

Italian Burger
1 medium onion (chopped)
1/4 c Italian salad dressing
2 t ground fennel
1 lb ground beef
4 hamburger buns
In mixing bowl, combine onion, salad dressing & fennel. Crumble beef over mixture. Mix well. Shape into patties. Grill or pan-fry 5 minutes each side or until no longer pink. Serve hot on buns.

Carribbean Turkey Burger
3/4 c bread crumbs
3 tbl chopped green onions
3 tbl parsley
2 tbl Worcestershire sauce
2 tbl Carribbean jerk seasoning
1/2 t salt
1 1/4 lb lean ground turkey
1 t olive oil
4 whole wheat hamburger buns
4 lettuce leaves
4 rings sweet red pepper (slciced thin)
In mixing bowl, combine the first six ingredients. Crumble turkey over the mixture. Mix well. Shape into four patties. In a large skillet, cook patties in oil over medium heat for 5 minutes on each side or until no longer pink. Place on buns. Cover with lettuce & red pepper rings. Serve hot.

Pizza Burger
1 pound ground beef
1 1/2 c pizza sauce
1 onion (finely diced)
1/2 green pepper (finely diced)
4 hamburger buns
4 slices mozzarella cheese
sliced pepperoni
In mixing bowl, combine hamburger meat, 1 cup pizza sauce, onions & green pepper. Mix well. Form 4 patties. In hot skillet, fry burgers over medium heat 5 minutes each side or until meat is no longer pink. Remove from pan and place on microwavable platter. Spread 1/8 cup sauce on each burger. Top with mozarella cheese & pepperoni. Heat in microwave for 10 seconds or until cheese melts. Place on bun & serve hot.

Onion Burger
1/2 c bread crumbs
2 t onion salt
2 t brown sugar
1 egg (beaten)
1 lb ground beef
1 1/4 c barbecue sauce
1/2 c mayonnaise
1/2 c barbecue sauce
1 t brown sugar
2 tbl butter
1/4 c honey
2 large sweet onions (thinly sliced)
4 slices smoked Cheddar cheese
4 hamburger buns
In mixing bowl, combine the bread crumbs, onion salt & brown sugar. Add egg. Crumble beef over mixture. Mix well. Form into four patties. Place in a shallow dish; pour barbecue sauce over patties. Cover and refrigerate for 2-4 hours. In a small bowl, combine the sauce ingredients; cover and refrigerate until serving. For topping, melt butter in a large skillet. Stir in honey until blended. Add onions; saute for 15 minutes or until tender and lightly browned. Keep warm. Drain and discard barbecue sauce. Grill patties, uncovered, over medium-hot heat for 5 minutes on each side or until no longer pink. Top each with a cheese slice; grill 1 minute longer or until cheese is melted. Serve on buns with sauce and onion topping.

Teriyaki Burger
1 (8 ounce) can water chestnuts (drained & chopped)
1/2 c teriyaki sauce
2 tbl chopped green onions
1 tbl garlic
1 t salt
1 t pepper
1 1/2 pounds ground beef
7 hamburger buns
14 slices tomato
7 leaves lettuce
In mixing bowl, combine the water chestnuts, teriyaki sauce, onions, salt, pepper & garlic. Crumble beef over mixture. Mix well. Shape into seven 1/2" thick patties. Grill, covered, over medium heat for 7 minutes on each side or until meat is no longer pink. Serve on buns with tomato and lettuce.

Calico Burger
1 1/2 lb ground beef
1/2 c cooked rice
1/2 c chopped onion
1/4 c chopped green pepper
2 tbl dried parsley flakes
1 t salt
1/2 teaspoon garlic powder
Dash pepper
5 hamburger buns
2/3 c water
1/4 c ketchup
4 tbl chili sauce
1 t Worcestershire sauce
1/4 t basil
In mixing bowl, combine the first eight ingredients. Mix well. Shape into 5 patties. Grill on medium high, 5 minutes, each side or until meat is no longer pink. Place on buns. Combine all sauce ingredients in a saucepan. Simmer for 15 minutes. Serve atop burgers.
